ABOUT OUR SPIRITS
All Cathedral Ledge Spirits are handcrafted, from grain-to-glass, in our timber frame barn in North Conway, NH. All of our spirits are Certified Organic by the USDA and Gluten Free.
We take a very traditional approach to whiskey making. Two runs through our 300 gallon pot still, condenser and spirit safe. No column, thumper, or doubler and we never cold filter. The low even heat provided by our steam boiler and powerful agitator allows us to make the first run a grain-in stripping run. This puts as much of the flavor of our organic grains into the whiskey as possible. All of our whiskeys are aged in new, 53 gallon, White American Oak barrels. Each of the whiskeys we currently offer, except for the Barrel Strength series, are two barrel blended from a #3 and a #4 char.

Organic Straight Bourbon Whiskey – $44.99
Our Straight Bourbon has a grain bill consisting of 69% corn, 19% Danko rye, and 12% malted barley. Tasting Notes: fruity, caramel, vanilla, cherry, rye bread.
Organic Straight Wheated Bourbon Whiskey – $44.99
Our Straight Wheated Bourbon has a grain bill consisting of 69% corn, 19% wheat, and 12% malted barley. Tasting Notes: smooth, wheat, hint of nutmeg, toasted English muffin, orange marmalade.
Organic Straight Rye Whiskey – $44.99
Our Rye Whiskey has a grain bill consisting of 54% Danko Rye, 34% Corn, and 12% Malted Barley. This is a very civil rye. Tasting Notes: caramel, spice, vanilla, allspice, cocoa, pumpernickel.

These whiskeys were distilled in our barn, aged over four years, and bottled at precisely 100 proof, consistent with the high standards set by the Bottled in Bond act of 1897

BARREL STRENGTH SERIES
These whiskeys were distilled and aged in our barn, and presented as single barrel releases. We bottle them RAW, with no dilution or filtering so you can experience them as we do.
Barrel #104 – $74.99
Wheated Bourbon (C69/W19/MB12) aged 41 Months. 124.6 Proof. Dark amber with a nose of Graham Cracker, straw, spearmint. Intensely flavorful, toasted English muffin, orange marmalade, strawberry, raspberry. A long lingering hug.
GINS
Organic Gin – $33.99
We build upon the London Dry tradition by starting with a backbone of Juniper, Coriander, Orange Peel and Lemon Peel. This American style Gin, however, is given its defining character with a significant charge of Green Cardamom Pods, and the complexity of the finish is built out with slighter charges of Angelica Root, Orris Root, Spicebush, and Fennel.

Organic Barrel-Rested Gin – $34.99
This gin is specifically crafted to complement the unique flavors available in our recently emptied rye whiskey barrels. Orange peel laced with vanilla and hints of rye are present on the nose. Hawthorn berry comes through in the mid-palate, balanced nicely with the angelica root, fennel and other botanicals. The Rye re-emerges on the long smooth finish.
VODKAS
Organic Vodka – $25.99
We make a traditional grain based vodka (45% Corn, 45% Wheat, 10% Malted Barley) using NH’s tallest vodka column. We proof to bottle strength by adding our pristine unfiltered local water.
Organic Maple Liqueur – $32.99
A quintessential NH product crafted from our Organic Vodka and NH produced Organic Maple Syrup. The sweetness is well balanced to work as a digestif, in cocktails, or over ice cream.
Organic Aquavit – $27.99
We offer our take on this traditional Scandinavian spirit. Built from our Organic Vodka, this Caraway centric Aquavit includes eight botanicals, providing a balance of warmth, baking spices, and citrus.
INFUSED VODKAS
All of our infused vodkas are made by immersing the title botanicals in our gold medal-winning Organic Vodka. We do not use any artificial flavors, preservatives, colorings or additional sweeteners.
Organic Blueberry Vodka – $27.99
Made from Maine wild blueberries, this unsweetened spirit is quite refreshing over a glass of lemonade.
Organic Fig Vodka – $27.99
Made from Black Mission figs and Turkish figs, this spirit draws enough sweetness out of the fruit to make a wonderful sipper, and enough flavor to stand out in a mule.

Crafted from fresh horseradish, this spirit is very popular with the Bloody Mary crowd. It also makes savory martinis (think Hot & Dirty or Dirty Pickle) and pairs well with seafood dishes.

With a strong charge of locally sourced fresh organic ginger, this spirit is the perfect start to your favorite mule cocktail. It also makes a wonderful martini to serve with Asian cuisine.
